Dispatches from July 2
9 AM: Walking my favorite path, Akolea Road. The morning gloom gives everything a sense of drama, even the cows and horses calmly enjoying their grazing.
The road goes ever on
Noon: Napping with the cat.
3 PM: Cooking up a storm! I’m making turkey meatballs with feta cheese, red onion, garlic, and fresh parsley. Pairing them with a salad of chopped cucumber, green pepper, tomato, red onions, and salad greens drizzled with tangy lemon-Dijon vinaigrette, served with homemade whole wheat pita.
I have some trouble with the pita. First, while mixing the dough, I failed to know my own strength:

Then I had trouble creating the classic pita “puff”. Most of them turn out flat and crackery, with maybe a side-bubble, though they still taste good. But I had one success!

6 PM: Eat! I love the bold flavors that the feta brings to the meatballs. When combined with the tart dressing and cool vegetables, it makes for a very nice mouthful.
