I know I sound kind of like an infomercial up in that there title, but hear me out. Tasty food is something worth getting out of bed for. And starting the morning with a filling and healthful meal can set the tone for a whole day of eating.
The Motel Gourmet answer to these concerns is my good buddy oatmeal! When I was little, I did not enjoy oatmeal, but as I’ve learned to load it up with all sorts of different flavors and ingredients, it’s now one of my favorite breakfasts. And it has tons of fiber, complex carbs, and a reputation for reducing the risk of heart disease. HOORAY FOR PORRIDGE!

Motel Gourmet Bowl O’ Oats (serves one)
1/2 cup old-fashioned rolled oats
1/4 cup chopped prunes
1 cup fat-free milk
Combine all ingredients in rice cooker and switch to “on”. Check it once or twice during cooking and stir to prevent burning at the bottom. In about 5-10 minutes, it’s creamy, hearty, and ready to eat. Seriously, it’s that easy!
This is a super-customizeable recipe. You can add nuts, nut butters, or yogurt; use water or non-dairy milks for liquid; substitute other fresh or dried fruits for the prunes; and add spices (cinnamon, nutmeg, cardamom, etc.) or flavorings (vanilla or almond extract, honey, maple syrup) that you favor!
