It’s gorgeous outside! And, this sandwich is gorgeous! I got so excited about this super-simple, deeply delicious sandwich filling that I had to share it with you all. It’s great because I can keep the core ingredients at the office, and it’s really quick to make, but it tastes more delicious than the sum of its parts.

Simone’s Stand-Up Sunshine Salmon Sandwich
(makes 2 sandwiches)
1 can (6 oz.) salmon – I used Alaskan Wild Pink salmon, low-salt
Six gherkins, cornichons, or other tiny pickles
1 packet Dijon mustard (about a teaspoon)
1.5 oz reduced fat cheese spread – I used Laughing Cow Swiss
2-4 slices of whole wheat bread
Toast the bread. Chop the pickles. Stir together salmon, pickles, mustard, and cheese until well combined. Add pepper or hot sauce if you’ve got it. Eat on toast or crackers. Wonder why on earth this is so delicious.
